Crabmeat Dip

 

 

1 large package cream cheese

½ T. of Tabasco sauce

1 stick butter

1 T. garlic powder

12 to 16 ounces of crabmeat (canned)

½ t. red pepper

1 small finely chopped onion

 

Cook onion in glass dish in microwave until soft. Melt cream cheese with butter. Add crabmeat, onion and rest of ingredients. Put in dish (or individual dishes) and bake in oven at 350 degrees for about 25 to 30 minutes. Serve warm with crackers or Fritos. (After removing from oven, let set a few minutes before serving.) This is delicious.

                            Hot Artichoke Dip

 

·        4 medium green onions with tops

·        1 can (16 ounces) artichoke hearts (some of the bottled artichokes have a vinegar flavor; it’s better to get the canned or bottled artichokes, packed in water, not marinated in oil)

·        ½ cup mayonnaise or salad dressing

·        ½ cup grated Parmesan cheese

·        Crackers or cocktail rye bread, if desired

Heat the oven to 350 degrees. Peel and chop the green onions. Drain the artichoke hearts in a strainer. Chop the artichoke hearts into small pieces. Mix the green onions, artichoke hearts, mayonnaise and cheese in an ungreased one-quart casserole dish.  Cover with lid or aluminum foil and bake 20 to 25 minutes or until hot. Serve with crackers or breadsticks.

Makes about 1-½ cups dip.

Salmon Cheese Spread

8 ounce cream cheese, softened

3 tablespoons mayonnaise

1 tablespoon lemon juice

1/2 teaspoon salt

1/2 teaspoon curry powder

1/4 teaspoon dried basil

1/8 teaspoon pepper

1 can (7-1/2 ounces) salmon, rained, bones and skin removed

2 green onions, thinly sliced

Crackers

In a mixing bowl, combine the cream cheese,  mayonnaise and lemon juice.  Add the salt, curry powder, basil and pepper; mix well.  Gently stir in salmon and onions.  Cover and refrigerate for at least 1 hour.  Serve with crackers.

Yield:  1-1/2 cups

This is put on in layers.  You can use either two pie plates or a cake pan.

Layer 1             Mix 1 can refried beans and 1 jar mild enchilada sauce

Layer 2             Mix 2 or 3 avocados, mashed with 2 tablespoons lemon juice

                         Salt and pepper

                         (I have substituted guacamole dip for this layer) 

Layer 3              1/2 C. mayonnaise

                          1 C sour cream

                          1 package taco mix

Layer 4              Chopped tomatoes

                          Chopped onions

Layer 5              Shredded cheddar cheese

Layer 6              Sliced black olives.

Use Doritos chips for dipping
